Still doing good

I made it a full week on my Vegan diet and it has gone amazingly well! I lost 8 pounds my first week and that is while being premenstrual. I only mention that because I usually bloat and gain at least a pound during that time. Sorry if that was too much information. I picked up a vegan cookbook so I am learning more about the ins and outs and about the various foods I can still make. Did you know that the original pizza did not have cheese on it? I am going to try to make a pizza with no cheese one of these days. Pizza is the only food that is off limits that is calling my name these days. I am resisting though. It is my nemesis, LOL! I also came across a recipe for vegan chocolate chip cookies which I am going to give a try. I am finding hummus to be one of my favorite vegan things to eat. I've always liked it, but now its a staple. I have also found a new appreciation for raw almonds. They are so filling when I feel especially hungry. People keep asking me if I feel tired and without energy. For the most part no. I am feeling really good. I have noticed that I do feel tired and slow when I haven't paid attention to getting a variety of veggies in along with the good fat (avocados and nuts) and protein. I find when I am carefully choosing a variety and ensuring my protein needs are met I feel really good and weight just falls off. I am eating the Ezekiel 4:9 bread and its very dense and good and has the benefit of being a complete protein and good source of grains. Soybeans are also a complete protein. I am learning a lot through this endeavor. I can't imagine going back to my old ways. This week I am focusing on building up on my exercising. We had our end of year skate party with the homeschool group on Monday and that was great exercise. I worked muscles I hadn't worked in ages. I am thinking about buying some skates so I can skate more often. There aren't a lot of great places to skate around here though.

A friend of mine told me prunes were good for her chocolate cravings. Have you tried those yet? I'm so happy for you that this is working so far. I've been thinking since you started this how I could choose healthier foods. I need to eat a wider variety of fruits and veggies.

Skating is a good exercise. It's been years since I have gone but my kids like to skate in our backyard. Not quite sure though where in Yucaipa it would work. I guess just on sidewalks in the neighborhoods.

So do you make your own hummus or use the store bought kind? Apparently there are a million different recipes. We have to make ours because we go through those little store bought containers too fast! It is also a lot less expensive to make it yourself.
Hope you're doing really well! (I am finally feeling better. :)

I've been buying the hummus at Fresh and Easy. I do have a couple of recipes I want to try though. I'm all for saving money. I'm so glad you are feeling better!

I'm really proud of you. I have been so bad lately and just can't seem to get control of my eating or my exercise. Last night, I thought I should pray about it more and then today here I was at Starbucks having my favorite frapachino and working through my lunch.

I think you'll like the magazine I found for you at Vegan cooking and animals.
