My Vegan diet day 4
This is the beginning of day 4 of my vegan diet and so far so good! I had to post because I got on the scale today and I have lost 3 pounds since Tuesday just by making these changes in my diet! I feel really good and it seriously hasn't been hard at all. I am actually shocked by how easily I have transitioned to this diet which in the past I have always thought was pretty extreme. I even gave up coffee completely! I have had no caffeine since Wednesday morning. I didn't have any headaches from giving it up, Thank God! I haven't missed meat at all and have missed cheese only mildly. I have found that staying full and hydrated keeps the cravings for junk food away. The kids have been doing this with me and there are only a few things they won't eat. They are still having milk but not much (1 cup per day, sometimes none), and will probably still have some cheese here and there although they haven't had any this week so far. Doug is insisting on some meat but only had it 1 night as opposed to 3 nights so he is doing good too! I have been very satisfied with my food. For example, hummus, vegetarian chili, tofu stir-fry, some great fruits & veggies, and almonds for snacking. Yummy! Just had to share!

SOOOOOOOO stoked for you...congrats!! I wish more people would see the benefits of eating meat-less..you are a great example of showing how it's not that hard.
I am so very proud of you! Just be careful, meat here and there is okay especially chicken or fish. Little ones and grown ups need those complete proteins here and there to help build and rebuild their bodies- ie- the true story of a vegetarian whose broken leg would not heal was prescribed red meat by their physician. There will be big dietary changes coming down the pike at my house too. Haven't given up coffee yet. I plan to switch to decaf when my big huge canister runs out, but I have given up all nutrasweet and other artificial sweeteners- so no more diet dr.pepper for me :(. Giving that up produced more withdrawl than coffee has for me.
